91 Points - Wine Spectator Magazine:
Lively and fresh, with an appealing mix of ripe black cherry puree, crème de cassis, lightly toasted raisin bread and just a touch of rich pastry cream and marzipan. Shows lovely, refined texture throughout. Drink now through 2018. 2,500 cases made." - AN (Dec 15, 2012)
Notes from the Winemaker:
The fabulously tempting color is an absolute delight for the eyes. The nose is full of the fresh, exciting aromas of pink grapefruit, strawberries, violet and marsh-mallow. As it opens out the wine exudes a veritable cascade of red fruit aromas. Lively, fruity yet delicate on the palate this is a rosé champagne full of freshness and purity.
Winemaking:
During pressing only the first juice off the press is retained. Cold clarification at (5°c). Fermentation in thermo-regulated stainless steel vats. A blended rosé including a quantity of red wine from Champagne. The wines are cold stabilized before being lightly filtered, bottled and then left to age in the cellars for 3 years.
