he cold Pacific influence, together with the vineyard’s mix of weathered sandstone, marine shale, fossilized shells, and limestone, results in grapes with vibrant berry acidity and palpable saline minerality. The Pinot Noir grapes were fermented with native yeast in neutral oak and stainless steel. No malolactic fermentation occurred. The wine was matured for five months in a combination of used barrels and stainless steel, and was bottled in mid-January.
the wine has a limpid, pale rose-gold color, with flecks of polished copper. Aromas of wild strawberries, fuji apples, and persimmon give way to salted tangerines, Rainer cherries, and kaffir lime, along with a fleeting suggestion of fresh butter, hazelnuts, and chamomile as the wine evolves in the glass. On the palate, the wine is dense (almost creamy), yet vibrant and supple, with ripe stone fruit and red berry flavors that recall the beautiful nose, along with palpable, pink sea salt minerality, and muted suggestions of dried pineapple, fresh green perilla, and white pepper.
