Onyx comes from specific vineyards which are selected for their uniqueness and exceptional terroir flavors. These vineyards are planted in the best terroir for the specific varietal. Vineyards are carefully monitored by the winemaker who ultimately decides when the grapes will be harvested. These grapes are handled separately in the cellar to preserve their natural quality and uniqueness. Onyx is a dedicated concept from site selection, through to the final drop in the glass at the end of a bottle.
Harvested at 24°Balling, crushed and destalked, 12 to 14 days fermentation at 25-28°Centigrade. Barrel maturation in French Oak , all new barrels for 14 months and aged in the bottle for 12 months before release.
Tasting Notes:
Nose: Soft oak and vanilla aromas.
Palate: An example of pure Cabernet Sauvignon fruits, with hints of blackberries, currants and chocolate flavors. Firm tannins give this wine a solid palate. Well balanced all around.
This is a food wine, that will soften over time, the optimum aging will be after 5 years from bottling.
